To achieve accurate temperature measurement correct installation is important. The sensor element is in the white silicone pad at the side of the sensor. So when to measure surface temperature it is important that the pad have good connection wiht the surface.

A cable tie is one way to ensure correct installation

The sensor can also be used as ambient temperature sensor in humid areas. The white pad should then face outwards.
